Pan Roasted Barbary Duck Breast, carrot puree, pak choi, star anise jus

To get this dish absolutely perfect our Head Chef- Neil pan roast's the duck skin side down, cooks our carrots in orange juice and star anise, before they are blended smoothly with butter. He then adds a scraped vanilla pod to our creamed potatoes, gently cooks the pak choi and tenderstem broccoli before he finishes the dish with a star anise jus.
